The nine-course degustation menu is a delicate blend of modern Italian classics. Authentic Italian flavours are prominent; a nod to the Chefs European heritage. The seasonal menu fuses together native Australian ingredients to create the most exquisite dishes.

Head Chef Rodolfo Maliverni and Sous Chef Stefano Pennucci have created a seasonal menu dedicated to showcasing the best possible flavours.

A core value of Vanitas is to maintain a high respect for nature by utilising every component of the produce with a zero-waste policy, while delivering the highest quality dishes.

Vanitas has a strong focus on sustainability, amalgamating premium ingredients with those often overlooked, elevating them to their highest potential, using both modern and traditional techniques. With zero-waste in mind, produce is selected seasonally and incorporated only when they are at their peak.

The talented team in Vanitas will provide exceptional service delivered in a warm and elegant environment. Vanitas offers a range of Italian wines carefully selected from the most important regions of Italy’s wine landscape, in addition to a range of award-winning wines from Australia and New Zealand.

Renowned among the best fine dining restaurants on the Gold Coast, Vanitas is an exceptional experience perfectly situated overlooking the sparkling lagoon. On the opposing wall is an exquisite 13-metre painting presenting the life of Gianni Versace. The artwork illustrates the love of Gianni's life and was inspired by his book "Do Not Disturb".
